Easy Mashed Potatoes

Prep Time : 10 minutes Cook Time : 20 minutes Total Time : 30 minutes Servings : 8 ingredients 3 pounds potatoes, (optionally peeled) cut into 1 inch cubes 4 cloves garlic, peeled 1/4 cup butter, melted 1/2 cup sour cream, room temperature directions Place the potatoes and garlic cloves in a large pot, cover in water, bring to a boil and cook until tender, about 15-20 minutes. Tip : Mash the potatoes by hand and not use a food processor or blender (which can turn them into glue). Option : Use yellow potatoes, or white potatoes, or red potatoes or russet potatoes. Option : Replace some or all of the sour cream with plain yogurt or milk, cream, etc. Option : Add 1 tablespoon white miso paste! Tip : Use warm butter and milk. Option : Mix in flavours! Hummus Veggie Tots Ingredients: 2 cups broccoli florets ¼ cup sliced carrots ¼ of a small onion ½ cup chopped zucchini 2 large eggs ¾ cup panko breadcrumbs ½ teaspoon salt 1/3 cup Sabra hummus (I recommend their Roasted Garlic or Roasted Red Pepper flavors, but you can use your favorite!) Directions: Place the broccoli florets and carrots in a microwave-safe bowl and cover the bowl with a damp paper towel. Microwave for 2 minutes on high. Transfer the broccoli and carrots to the bowl of your food processor and combine with the onion and zucchini. Cover and pulse several times until the vegetables are minced. Transfer the minced veggies back into a mixing bowl and combine with the remaining ingredients. Stir together until well combined. Pre-heat the oven to 400 degrees. Pumpkin Pie Bites Ingredients: 1 package of 15 mini phyllo shells (such as Athens, found in the frozen aisles) 2 oz 1/3 less fat cream cheese, softened to room temperature 4 tablespoons sugar 1 large egg white ½ cup canned pumpkin ½ teaspoon vanilla extract ¾ teaspoon pumpkin pie spice Directions: Pre-heat the oven to 350. Line a baking sheet with aluminum foil. Unwrap the package of phyllo shells and place them on the baking sheet In a mixing bowl, combine the cream cheese and sugar and beat with a hand mixer until smooth. Crustless Spinach and Feta Quiche Ingredients: 1 teaspoon olive oil 1 small onion, chopped 5 large eggs 1 cup 1% low fat cottage cheese 2 oz crumbled Feta cheese ¼ teaspoon salt 1/8 teaspoon black pepper 1/8 teaspoon crushed red pepper flakes 10 oz frozen chopped spinach, thawed and squeezed to remove any liquid Directions: Pre-heat the oven to 350 degrees. Lightly mist a 9-inch pie plate with cooking spray and set aside. Drizzle the oil in a skillet and bring over medium heat. Chili Maple Glazed Salmon

Lightly oil the salmon and place on a rimmed baking sheet. Sprinkle on a big pinch of salt and pepper. In a small bowl whisk together chili, paprika and coconut sugar. Rub on top of the salmon. Roasted Fingerling Potatoes Ingredients: 1 ½ lbs (24 oz) fingerling potatoes, cut in half lengthwise 1 tablespoon olive oil ½ teaspoon dried thyme ½ teaspoon dried parsley flakes ½ teaspoon salt ¼ teaspoon black pepper ½ teaspoon minced garlic Directions: Pre-heat the oven to 425.
